Garden Salad Recipe
Ingredients
- 1 cup arugula
- 1 cup baby spinach
- 2/3 cup peppers, thinly sliced
- 1/2 onion, thinly sliced
- 1 pint cherry tomatoes, halved
- 1/2 cup carrots, sliced
- Lemon Vinaigrette
- 1/4 cup freshly squeezed lemon juice
- 2 tsp sugar
- 1 tsp Dijon mustard
- 1/2 cup extra virgin olive oil
- sea salt & freshly ground pepper, to taste
Preparation
Mix together greens, peppers, onions, tomatoes and carrots.
Whisk together lemon vinaigrette ingredients. Drizzle over salad.
